    Karamani Salad | Cowpeas Salad - A light and breezy salad for the summer. Simple lemon dressing with a pinch of spice and seasoning.

    Whenever I am pressed for time, I always make a variety rice or Pulav for Lunch. It has rice plus veggies mixed with it and instead of my curd rice at the end, I have raita as a side. As an alternative to this, I also make this light, a juicy and refreshing salad which is also perfect for the Summer. This gives a satisfaction of having a complete meal and it also caters to my palette!

    A light and breezy salad for the summer. Simple lemon dressing with a pinch of spice and seasoning.

    Ingredients
    • 1 Cup Karamani | Cowpeas
    • ½ Cup finely diced Vengayam | Onions
    • 2 Pachai Milagai | Green chillies, finely chopped
    • 1 teaspoon Roasted Jeeeraga podi | Cumin powder
    • ½ teaspoon Roasted Dhaniya podi | Coriander powder
    • Finely chopped coriander for garnish
    • Lemon juice as needed
    • Salt to taste
    • Pepper to taste
    • A pinch smoked Paprika leave it of you don't have one
    Instructions
    1. Rinse and soak the cowpeas overnight. Rinse again and cook them with little salt until it is tender. The lentils should hold the shape but soft to bite. 

    2. Drain the water and let them cool completely. 

    3. Then in a mixing bowl, add all the ingredients, seasoning and let them sit for 5 minutes. Just before serving garnish it with coriander leaves.  

    4. Serve them immediately. If serving after a couple of hour of preparation, add the seasoning, spice mixes and lime juice few minutes before serving.

      I make cowpea salad often with other added salad ingredients to make it into a wholesome meal. Love how refreshing yours looks.

      These lentil salads are a blessing ! There are umpteen times when I relish them for my dinner.
