A light and breezy salad for the summer. Simple lemon dressing with a pinch of spice and seasoning.
Rinse and soak the cowpeas overnight. Rinse again and cook them with little salt until it is tender. The lentils should hold the shape but soft to bite.
Drain the water and let them cool completely.
Then in a mixing bowl, add all the ingredients, seasoning and let them sit for 5 minutes. Just before serving garnish it with coriander leaves.
Serve them immediately. If serving after a couple of hour of preparation, add the seasoning, spice mixes and lime juice few minutes before serving.
