    Masla Rice

    For the third day, it is a simple masala rice made with a concoction of vegetables.  Whichever veggie is readily available, use it in this dish. When the cold days commence, heart yearns for spicy and hot food like these. As per your hearts content adjust the spice and enjoy.

    Mamidikaya Pappu | Mango Dal | Mangai Paruppu

    Masala Rice

    A simple veggie rice with garam masala.

    Prep Time: 10 Mins | Cook Time: 15 Mins | Total Time: 25 Mins | Serves: 2

    Ingredients

    • 1 Cup Rice, preferably Basmati rice
    • 1 teaspoon Oil
    • Salt to taste
    • 1 tablespoon Butter or oil
    • ½ teaspoon Cumin seeds
    • 1 Medium sized Onion, finely chopped 
    • 1-2 Medium sized tomatoes, finely chopped
    • 2 Cups finely diced vegetables (carrot, peas, beans etc.)
    • ¼ teaspoon Turmeric powder
    • ¼ teaspoon Red Chili powder
    • 1 tablespoon Garam Masala powder
    • Salt to taste
    • Few finely chopped coriander for garnishing
    Instructions

    1. Pressure cook the rice with little oil and salt. Let it cool and then fluff it up with a fork to separate grains. 
    2. Heat butter or oil in a pan. Once it is hot, add the chopped onions and sauté until it turns golden brown. 
    3. Then add the diced tomatoes and other veggies. Sprinkle some water and let it cook.
    4. Once soft and tender; add the peas (if frozen); stir them quick. Then add the spice mixes and salt and mix well. 
    5. Finally add the cooked rice. Mix them well. Check for the spice and seasonings; adjust if needed. 
    6. Turn off the flame. Add coriander leaves for garnishing. 

    Notes

    1. The tomato is added for little sourness. So add one or two depending on how tart the tomato is.
