Another kootu from my stash. I have never a cuisine other than Indian use seeds extensively. From water melon seeds to pomegranate seeds almost everything is used in cooking. So is Jackfruit seed, known as palakottai in Tamil, is edible and used in Sanbhar, kootu and even as poriyal. As such palakottai does not have any taste and it is very hard but when it is boiled or roasted, the seed's subtle sweetness is brought out. Today's recipe is a simple kootu made with these seeds and a coconut base.

We don't use jackfruit in cooking. The only cooking we do with is roasting the seeds and eat 🙂 Kottu looks yummy!

Yummy kootu with jackfruit seeds. We rarely use them in my household but I think they are quite popular in the coastal Andhra cooking.
