    Dry Fruits Pilaf

    For the second day of Marathon, yet another healthy and a very flavourful dish. Serve this with a mildly spiced (for kids) or spiced up gravy dish.

    Dry Fruits Pilaf

    Basmati rice flavoured with rose essence and topped with assorted nuts.

    Prep Time: 10 Mins | Cook Time: 15 Mins | Total Time: 25 Mins | Serves: 2

    Ingredients

    • 1 Cup Basmati Rice
    • Few Saffron strands
    • 2 tablespoon Butter
    • 1 Bay leaf
    • 2 Cloves
    • ½" Cinnamon stick
    • 2-3 Cardamom pods
    • 1 Medium sized onion, finely diced (Optional)
    • ¾ Cup Milk, divided (at room temperature)
    • ¼ Cup Water
    • 1 tablespoon Ghee | Clarified butter
    • ½ Cup roughly coarse dry fruits & nuts ( cashews, raisins, almonds, walnuts, apricots etc...)
    • 1 teaspoon Rose essence (optional)
    • Salt to taste
    • Coriander leaves for garnishing 
    Instructions

    1. Soak the rice in water for about half an hour. 
    2. Warm 2 tablespoon milk and add saffron strands. Keep aside until it changes colour. 
    3. Heat butter in a pan. Add the bay leaves, cloves, cinnamon stick and cardamom. Give a quick stir.
    4. Then add the onions and saute until it becomes translucent. 
    5. Then add water and milk. Bring it to a boil. Drain the water from the Basmati rice and add it to the pan. Also add the saffron mixed milk to this. 
    6. Stir it well so that the rice does not stick to the bottom. Cover and cook until done. 
    7. Meanwhile fry the dry fruits in ghee until it becomes golden brown. Keep aside. 
    8. Once the rice is cooked, separate the grains. Add the rose essence and the dry fruits. Garnish with coriander leaves. Mix them well and keep it covered until you serve. 

    Notes

    1. You can add any nuts and dry fruits of your choice. 
    2. Alternately you can cook the rice in a pressure cooker along with the whole spices. Then mix it with the ingredients.
