    Beetroot Poriyal | Beetroot Kari

    Poriyal or Kari as we Tambrahms say - is an everyday side that south Indians have it with their meal. They go as a side to the regular Rasam and Sambhar rice. Here is a simple beetroot poriyal that we make often at home.

    Beetroot Poriyal | Beetroot Kari

    Simple beetroot poriyal.

    Prep Time: 10 Mins | Cook Time: 15 Mins | Total Time: 25 Mins | Serves: 2

    Ingredients

    • 2 Cups chopped Beetroot
    • 2 tablespoon Coconut Oil (1)
    • ¼ teaspoon Mustard seeds
    • ½ tablespoon Channa Dal
    • 1 teaspoon Urad Dal
    • Few curry leaves, washed and torn
    • ¼ teaspoon Asafoetida
    • 2 Red Chillies 
    • Salt as per taste
    • 2 teaspoon Curry powder 
    Instructions

    1. Heat oil in a skillet. Once it is hot, add the mustard seeds and let it splutter.
    2. Then add the red chillies, curry leaves; give a quick stir.
    3. Add the channa dal and then the urad dal. 
    4. Once it starts becoming golden brown add hing and then the chopped beets. 
    5. Add salt. Sprinkle some water and cover and cook until it becomes soft and tender to bite.  (2)
    6. Finally just before switching off the flame; add curry powder. Give a quick stir and turn off. 

    Notes

    1. Coconut oil enhances the flavour of this dish, especially if you add coconut to the kari. If for any reasons you don't use it or have it, substitute with regular cooking oil. 
    2. Alternately you can cook the beetroot and then add it. You can also check here for easy way to prep a beet.

      This one is my daughter's favourite.... Instead of chopping i grate the beetroot.Cooks faster.
