    Jackfruit seeds Kootu | Palakottai Kootu

    Another kootu from my stash. I have never a cuisine other than Indian use seeds extensively. From water melon seeds to pomegranate seeds almost everything is used in cooking. So is Jackfruit seed, known as palakottai in Tamil, is edible and used in Sanbhar, kootu and even as poriyal. As such palakottai does not have any taste and it is very hard but when it is boiled or roasted, the seed's subtle sweetness is brought out. Today's recipe is a simple kootu made with these seeds and a coconut base.

    Jackfruit seeds Kootu

    Prep Time: 10 Mins | Cook Time: 15 Mins | Total Time: 25 Mins | Serves: 2

    Ingredients

    • 20-25 palakottai | Jackfruit seeds
    • 1 Cup Chopped Vellai Poosanikai | Ashgourd (you can also substitue chayote)
    • 3 tablespoon Pasiparupu | Mung dahl
    • Salt to taste
    For Tempering
    • 1 tablespoon Oil
    • ¼ teaspoon Mustard seeds
    • ¼ teaspoon Cumin seeds
    • 3-4 Curry leaves, torn
    • 3 Red chillies
    For Grinding
    • ¼ Cup chopped Grated coconut
    • ¼ teaspoon Cumin seeds
    • 1-2 Vatha Milagai | Red chilli 
    Instructions

    1. Pressure cook the dal and palakottai with turmeric powder and keep aside. 
    2. Now, take out the seeds and remove the hard white skin. You can cut this in half and then remove it easily. Quarter each seed and keep aside. 
    3. Heat oil in a Kadai | Pan over medium high heat. 
    4. Once the oil shimmers, add the mustard seeds and let it splutter. Then add the cumin seeds, curry leaves, red chillies and fry for a second. 
    5. Then add the chopped ash gourd, salt and little water to cook them. 
    6. Once the veggies are cooked, add the chopped seeds, ground paste and dahl.
    7. Let it boil for about 5 minutes. Add water if it is becomes very thick. 
    8. Finally garnish it with coriander leaves and turn off the flame. 

    Notes

    1. Jackfruit seeds when chopped will ooze a sticky white milk kind of substance. So you can either cook them before chopping or rub flour or oil in hand and then handle it. 
    2. If your seeds are very tender, you don't need to pressure cook them. Just boil it with the veggies.

      We don't use jackfruit in cooking. The only cooking we do with is roasting the seeds and eat 🙂 Kottu looks yummy!

      Yummy kootu with jackfruit seeds. We rarely use them in my household but I think they are quite popular in the coastal Andhra cooking.
