Pineapple Kesari | Pineapple Semolina Puddding

    Kesari flavoured with pureed pineapple.

    Prep Time: 10 Mins | Cook Time: 15 Mins | Total Time: 25 Mins | Serves: 2

    Ingredients

    • ½ Cup chopped pineapple (1)
    • ¼ Cup Rava | Sooji
    • Sugar as needed
    • 1 Cup Water
    • 3 tablespoon Ghee | Clarified Butter
    • 1 tablespoon of crushed nuts
    • Few raisins
    Instructions

    1. Cook the chopped pineapple in water until it becomes soft and tender. Drain the water and puree it.
    2. Meanwhile in a Kadai or a pan add ½ tablespoon ghee. Roast the rava until it slightly changes colour. Transfer it to a plate.
    3. In the same pan roast the nuts and raisins until they become golden colour. Keep aside.
    4. Add a cup of water in the same pan. Bring it to a boil. Then reduce the flame to medium low and add the roasted rava gradually while stirring it continuously in one hand.
    5. Cover and cook for about 7-8 minutes until the smeolina is fully cooked.
    6. Then add the pineapple puree and sugar and mix well. Add the remaining ghee and stir until it becomes semi solid mixture.
    7. Garnish with nuts and serve warm.

    Notes

    1. The amount of pine apple depends on how sour it is. So add puree accordingly and based on this, adjust the amount of sugar.
