    Nawabi Aloo

    "Tell me what you eat and I'll tell you who you are" wrote a renowned gastronome Brillant Savarin. Food and identity are so closely tied. What we eat is elemental to our sense of identity and belonging. Food choices, eating habits and cooking methods often feature and pertain to certain groups or community among humans. While the court of Royals may have a rich and a copious feast, the commons may have a slightly adapted version of the same food based on his affordability.  Food is talked about as a social and cultural identity. One of the reasons for having a world-wide varied cuisine leaving us with so many options to relish from. 

    The term Nawab means - provincial governor in the Moghul India. So the Nawabi's cuisine will be royal and rich reflecting their social status. Nawabi Aloo is a dish from the nawabs of Awadh, presently known as Lucknow region in North India. This potato based dish is a mix mildly spiced and sweetish in taste. Best paired with a Pilaf and as always any Indian gravy would be paired even with rotis and Nan.

    Prep time: 10 mins | Cook time: 30 mins | Total time: 40 Mins | Serves: 2-3

    Ingredients

    • 2 Cups Diced Potatoes (Quarter inch diced)
    • 1 Cup Finely chopped Tomatoes
    • 2 Tbsp Oil
    • ½ tsp Cumin seeds
    • ½ Cup Milk
    • ½ Cup Water
    • Coriander leaves for garnishing
    To Grind to a smooth paste
    • ½ tablespoon Poppy seeds
    • ½ tablespoon Cumin seeds
    • ½ tablespoon Coriander seeds
    • 1 teaspoon Fennel seeds
    • 1 tablespoon Grated Ginger
    • 2-3 no's Green chillies
    • ½ teaspoon cardamom Powder
    • 1 Cup sliced Onion
    Instructions

    1. Heat a tablespoon oil in a pan and add the onions once it is hot. Sauté it until it turns golden brown. Cool it. Along with the other ingredients mentioned under to grind, grind it to a smooth paste by sprinkling water if required.  
    2. Heat a tablespoon Oil in a pan and brown the potatoes on all sides. Drain it to a paper towel and keep aside.
    3. In the same pan add another tablespoon oil and add the cumin seeds. Once they splutter, add the finely chopped tomatoes and keep stirring frequently until its fully cooked. 
    4. Once it is cooked, add the paste and fry for about 3-4 minutes. Then add the potatoes, milk, water, sugar, salt and bring it to a boil. Check seasoning and adjust. Garnish it with coriander leaves and serve.
