Mix all the ingredients in a bowl. Sprinkle very little water at a time and mix well. Add just enough water to coat the peanuts in the flour mixture. Check for seasoning and adjust the spice and salt as needed.
Meanwhile, heat oil in a pan for frying them. In a medium flame, fry the peanuts in batches. Try to separate the peanuts as much as possible after adding them in oil.
Strain the excess oil in a tissue paper and once it cools, store them in an airtight container.
You can also add curry leaves and minced garlic for extra flavour.
Deep frying them in medium-flame is very important. Otherwise, it might get burnt easily and taste bitter.
If you taste them as soon as you deep fry them, it might not be crunchy. Allow it to cool and then taste it.
Also, use very little water while preparing the flour mixture. The amount of water should be enough to coat the peanuts. Do not add more.
